Craving Hearty Winter Meals: Beef Rogan Josh

COOK & PREP TIME: 2hrs and 20 MINS    SERVES: 4-5

 

INGREDIENTS

1kg beef chuck steak, cut into 4cm cubes

4 tbsp ghee

1 cinnamon stick

8 cardamom pods, bruised

3 cloves

1 large onion, finely diced

4 cloves garlic, minced

2 tbs ginger, finely minced

½ cup tomato passata

3 tbsp sweet paprika

2 tbsp ground cumin

2 tbsp ground coriander

1 tbsp turmeric powder

½ tsp nutmeg

2 tsp Garamond masala

1 tsp chilli powder (ground chilli)

½ cup tomato passata

2 cups water

1 x Massel, chicken stock cube

1 tbsp salt

2 tbsp natural yoghurt

Steamed rice to serve

Coriander to serve

 

METHOD

Heat the ghee in a large heavy based pan on high heat, add the cinnamon stick, cardamom & cloves and fry for 1 minute. Turn the heat down to low and add the onion, cook for 5-6 mins till softened. Add the garlic and ginger and cook for a further 2 mins till fragrant.

 

Turn the heat up to medium/high and add the spices to the onion mix and cook for 30 seconds to a minute. It will be quite dry at this stage and you should start to smell all the spices. Add the tomato passata, stock cube, water and salt, stir to combine. Add the diced beef and bring to a simmer.

 

Pop the lid on the pan and turn the heat down to the lowest simmer possible and allow it to cook for 2 hours. The meat should be pretty tender by this stage.

 

While you are getting the rice ready remove the lid on the curry and allow the curry to simmer away for a further 30 mins so that the sauce reduces and thickens up. The meat should be very tender by now.

 

Just prior to serving stir through the yoghurt and serve the curry with rice and garnished with coriander leaves.
