One Pan Meal: Creamy Chicken, Leek & Pancetta

We love this beautiful creamy chicken dish thoughtfully prepared by our friends at @thefamilyfoodie_au in our Chasseur 5L French Oven. COOK & PREP TIME: 40 MINS    

SERVES: 6

 

 INGREDIENTS

1-1.2kgms chicken thigh fillets with skin on (or 2 pieces per person)

1 tbsp olive oil

1 leek, white part finely sliced

200gm pancetta, roughly chopped

1 tbsp butter

½ cup white wine

1 chicken stock cube

½ cup water

2 tsp dijon mustard

250gm light cooking cream

¼ cup grated pecorino cheese

2 bunches of asparagus

150gm green beans

 

METHOD

Heat oven to 220 degrees.

 

Heat oil & butter in a chasseur casserole pan on high heat, add chicken skin side down & cook for 5 mins on skin side then turn & cook for 3 mins on the other side. Remove the chicken from the pan & set aside.

 

You then want to use the oil & butter that is left in the pan to sauté your leeks but you don’t need a lot so remove any excess. Be very careful as it will be very hot.  Add leeks & pancetta & sauté for 5 -6 mins till leeks have softened & pancetta is starting to golden. This will also deglaze the pan at the same time adding extra flavour.

 

Add wine, stock cube, water & mustard & stir well to combine. Return the chicken & any juices back to the pan, put the lid on & pop in the oven for 20 mins.

 

Remove the dish from the oven, take the chicken pieces out and set aside for a minute. Whisk in the cooking cream and pecorino and nestle the beans and asparagus around the edges of the chicken. Return to the oven uncovered for 10-15 mins

 

Serve with creamy mash potatoes and some crusty bread to mop up sauce.

 

NOTES

Using oil and butter at the beginning means you get a lovely buttery taste but without it burning as the oil helps prevents the butter burning.
